This recipe comes from my sister Meggan.
It is the only recipe for pancakes that her pancake connoisseur husband will eat.
It comes from allrecipes.com and makes 8 pancakes.
3/4 cup milk
2 Tbs white vinegar
1 cup flour
2 Tbs white sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 egg
2 Tbs butter, melted
Combine milk and vinegar and set aside for 5 minutes to "sour".
Combine dry ingredients in a large mixing bowl and whisk together. Whisk egg and butter into soured milk. Combine wet and dry ingredients and whist until lumps are gone.
Cook by 1/4 cupfuls onto preheated skillet. (Spray skillet with cooking spray if surface is not nonstick.) Flip when bubbles appear on the surface and then until browned on the other side.
