Oh, this is good stuff!
It goes well with any south of the border dish or salad and can be made ahead.
It actually tastes better when made ahead.
The first one is called Cafe Rio Creamy Tomatillo Dressing
I found this online and credit goes to Sheri Denney
- 1 (1 ounce) package ranch dressing mix
- 1 cup buttermilk
- 1 cup Mayo
- 1 large or 2 small tomatillos (they are green and by the tomatoes)
- 1 clove garlic, minced
- 1/2 bunch cilantro, chopped
- 1/2 teaspoon lime juice
- 1/2 to 1 small jalapeno, seeds removed
Blend all ingredients together in a blender or food processor and store in the refrigerator to let the flavors meld. Beware that the dressing tends to get hotter the longer it sits.
* For our family I use 1/2 mayo and 1/2 sour cream and reduce the amount of cilantro slightly.
The second one was shared with me by my sister, Meggan.
I don't know where she found it.
Cafe Rio Dressing
1 1/3 C sour cream
3/4 C mayo
1/2 bunch cilantro
1 package ranch mix
4 T salsa verde
2 cloves of garlic
1/8 t tabasco sauce
juice of 1 lime
Milk to thin if needed
Mix in a blender and refrigerate until ready to serve.
